Pennette with Montasio cheese


Ingredients for four:
- 300 gr of pennette pasta
- 3 medium-sized potatoes
- 100 gr of smoked bacon
- a large onion
- 50 gr of butter
- 200 gr of Montasio cheese salt and pepper

Cut the Montasio cheese and the peeled potatoes into cubes, the bacon into strips and the onion into thin slices.
Soften the bacon and the onion in the butter in a large pan, without browning them. After a few minutes, place the lid on the pan and cook for a further five minutes over a low heat.
Boil the potatoes together with the pasta in salt water. Drain, saving a few tablespoons of the water, then add the potatoes and the pasta to the pan with the onion and bacon and cook briefly over a high heat.
Add the cheese and the water from the pasta and stir for a few moments. Place the lid on the pot and leave for a few minutes, season with a little freshly-ground pepper and serve.
