Ingredients for four:
300 gr of potatoes
1 egg
00 flour as necessary
100 gr of Belluno dairy cheese
50 gr of butter
A few sage leaves
Cook the potatoes in boiling salt water.
Mash the potatoes and mix them with the egg, flour and a pinch of salt. Roll out the paste thus obtained to a thickness of 2-3mm. Cut out into rounds of 7-8cm across. Cut the cheese up into cubes, place the cubes in the blender with a drop of milk and mix until the desired consistency is achieved. Fill the rounds of the potato paste with the cheese mixture and close them up into “parcels”. Drop into boiling water, and when they re-surface, drain and serve with melted butter, sage and a sprinkling of Parmesan cheese.
